Traditional Food from Orava
In the lower Orava region the agriculture was more developed and
the life in the upper Orava region was more influenced by the shepherd's
tradition. The character of the food and the way of life of Orava
people were influenced by natural and climatic conditions. In the
past, the cultivation of patatoes was very much spread all over
this region and the patatoes together with oats were the main ingredients
of nourishment. The Orava potatoes were considered as the best ones
in the whole of the Hungarian Kingdom. The vegetables, mainly cabbage,
and fruit was less cultivated. In the lower Orava region they also
grown wheat, rye and barley, but in the upper Orava region they
seeded only oats and planted potatoes. The cabbage was pressed into
barrels and left to segment. From oats they prepared porridge, which
was then eaten with milk or with cabbage. The main nourishment were
potatoes, which in the richer families were eaten blend with milk.
The poverty was little saved by breeding of the cuttle. The cows
gave milk and richer people sold oxes for meat. Milk was also gained
from goats and sheep, as well as cheese and meat. A lot of cheese
products were made and the local speciality in those days were the
cheese strings and smoked cheese from the Zazriva village.
